... A Gluten-Free Pasta Casserole that won the Best Compliment at the Easter Gathering
The day before yesterday, I brought a gluten-free pasta casserole to an Easter gathering of family and friends.
It came out of the oven bubbling and golden, the kind of dish that quietly settles onto the table and waits to be discovered. But I had to bring it on an hour’s drive, so I wondered if it would survive the trip.

And then, even though we were the only ones needing to eat gluten-free and the others there had all kinds of gorgeous-looking pasta casseroles to choose from, I heard a new acquaintance say…
“No way… that’s gluten-free?”
I smiled.
Because that’s always my favorite moment.
There’s something deeply satisfying about watching people enjoy a dish—going back for seconds, chatting, completely at ease—and then realizing it’s gluten-free.
That pause. That little surprise.
It reminds me of why I started developing my own recipes in the first place. Not just because we needed to eat that way, but so many others do too.
I never wanted gluten-free food to feel like an alternative.
I wanted it to feel like home.
Comforting. Familiar. Shared.
Over time, I’ve learned that it’s not about replacing what’s missing—it’s about creating something that stands on its own. A twist of an ingredient that gets noticed. In this case, the pairing of sweet potato as a Pierogi filling with 3 cloves of honey garlic as a sweet yet pungent surprise to the casserole.
It was something you’d bring to a table like this.
Something that belongs.
The casserole I made the day before the event, but baked the morning of, is one of those recipes. Simple, adaptable, and always well received. The kind you make without much fuss, but that people remember.
And maybe that’s what I enjoy most—those quiet moments where food brings people together, without needing an explanation.
Just a plate passed, a second helping taken, and a small, surprised:
“No way!”
